Chocolate Chip Cookies

¾ Cup Brown Sugar
¾ Cup White Sugar
2 Tbsp Chia seeds
6 Tbsp water
1 Cup butter (softened)
½ tsp salt
1 tsp baking powder
1 tsp vanilla extract
2 ¼ Cups flour
1 Cup mini chocolate Chips

1) Preheat oven to 375 degrees F.
2) Combine water and chia seeds in a large bowl.
3) Mix chia seeds and water. Let sit for 1-2 minutes.
4) Add in both sugars, butter, vanilla extract salt, and baking powder.
5) Mix together until well blended.
6) Add in flour and chocolate chips
7) Roll dough out into balls appx. ¼ inch in diamater
8) Place on cookie sheet.
9) Place for 3-5 minutes on top rack, 3-5 minutes on bottom
10) Eat cookies

Thyme Potatos

Thyme Potatos

½ cup olive oil
1 Tbsp sesame oil
1 ¾ tsp salt
1 ½ tspgarlic powder
1 tsp thyme

Chop up potatoes
Toss everything together
Lay out potatoes on a baking sheet
Cook at 400 F for 1 hr

Chicken Noodle Casserole

1 can Cream of Mushroom Soup
1/2 cup almond milk
1 cup frozen peas
2 cans chicken (Kirkland brand from Costco works good)
2 cups elbow noodles
Potato chips to desired crunchyness

1) Cook the elbow noodles according to the instructions
2) Drain the noodles and pour into a 13×11 inch pan
3) Add in the Mushroom soup, almond milk, frozen peas, and chicken.
4) Bake at 400 degrees F for 15-20 minutes (until it starts getting bubbly)
5) Crush the potato chips and layer them on top.
6) Bake until lightly browned, 5-10 minutes

Cashew Cheese

1/4 Cup Raw Cashews
1 Cup hot water
2 Tbsp + 1tsp tapioca starch
1 Tbsp olive oil
1 small clove minced garlic
3/4 tsp sea salt
1 tsp fresh lemon juice

1) Soak cashews for several hours
2) Drain cashews
3) Add all ingredients into a blender
4) Blend ingredients until completely smooth
5) Pour into saucepan. Cook on medium heat stirring constantly
6) Once mixture starts to look like it’s curdling, reduce heat
7) Continue stirring for several minutes
8) Once cheese becomes a cohesive, slightly stretchy mass, you’re done.

note: Tapioca starch can be substituted for half the amount of corn starch. ie: This recipe would require 1 Tbsp and 1/2 tsp cornstarch. Cornstarch will not create as stretchy a cheese though.

Basic Bread

2 cups warm water
3 tsp active dry yeast
1 Tbsp sugar
1 tsp salt
4 Tbsp olive oil
4 cups flour

1) Warm up water in a large bowl. The water should be warm to the touch, not too hot.
2) Mix in sugar and yeast, let sit for 3-5 minutes.
3) The yeast should now be bubbling up. Add in all remaining ingredients and begin kneading the dough.
4) Add in flour as needed. Once done kneading, let dough rise for 10-20 minutes.
5) Punch down dough, let rise for another 10-20 minutes.
6) Split dough into two pieces, place in bread dough pans.
7) While dough rises, preheat oven to 350 degrees F.
8) Bake until crust is slightly browned, appx. 20-30 minutes.
